A single unsourced post claiming GTA VI ships with 500+ drivable vehicles. It has been recycled into listicles ever since.

No source, no receipts, and Rockstar has never given a vehicle count for any GTA. GTA V launched with ~260. The number could turn out close by luck, but right now it’s a made-up figure wearing an “insider” badge.
